To keep it simple, you don't NEED to install a stroker crank and pistons in your VW engine to increase displacement or make more power - you can achieve that much easier with larger bore cylinders.The question is how much power do you need and when do you need it. For a drag car, you typically want as much power as you can safely handle and you want it as soon as your foot touches the pedal. This is an obvious application for using a stroker crank. A stock VW engine is undersquare, which means it's piston bore is larger than it's stroke, so they're generally not going to get into the power band until the higher RPM ranges. That's bad for drag racing.
If your VW is just for tootling around town, you probably won't benefit much from a stroker engine. They cost significantly more to build and the increase in displacement will hurt fuel efficiency.
Whether or not a stroker engine is right for you really depends on your application and familiarity with VW engine design and tuning. Anything you do that diverges from the original design will require extra work and care to prevent any major failures.
So if you want more torque, have the money, and are confident you can tackle clearancing components in your engine, have at it. Otherwise, it's best to stick with stock crankshaft stroke.
